Looking for a quick and simple way to make BBQ chicken – look not further! You have to try this dry rub, it is truly amazing and packed with flavour!

Dry rubs are a favourite of mine, you put on (in this case chicken) and start cooking right away, no need to wait and marinate if you don’t want to.
You can mix this up ahead of time and put in a sealed jar and bring out as you need. As its main ingredient is brown sugar, if it gets a bit hard, you can always toss in a piece of bread to keep it fresh and soft.
If you are worried about your chicken becoming sweet because of the brown sugar, don’t worry, it does not at all. The brown sugar really help bring out the flavour of the chicken as well as he spices. If you are BBQ’in this you don’t even need to add BBQ sauce to you chicken as this rub packs a lot a flavour!
What you need to make this amazing rub:
- 1/4 Cup of light brown sugar
- 1/2 teaspoon salt
- 1/2 teaspoon fine ground black pepper
- 1/2 teaspoon hot chilli pepper powered – more if you want a bit more spicy
- 1 teaspoon garlic powder
- 1 teaspoon cumin powder
- 1 teaspoon onion powder
- 1 teaspoon Italian herb blend
Mix all together until well combined.
When ready to use, apply generously to your chicken pieces, mix until evenly coated. Cook as desired.
