If you are in the mood for some peanut butter cookies but not up for the “process” of making cookies – these are perfect. These are also a fun recipe to make with your kids. They take such a short amount of time and only use 3 ingredients. Honestly, I wish I had known about this easy kid friendly cookie recipe when my oldest son was small. As much as I loved baking with him it was always a chore when it can time to clean up… I mean all the flour and sugar every where yikes!
They require 3 ingredients – the obvious peanut butter, brown sugar and an egg! That. Is. It. They take about 9 minutes in the oven and less then few minutes to get ready.
They are soft and tender, they do not get hard like some peanut butter cookie recipes. They taste just like the ones you buy in the bakery section, but better! They are packed with peanut butter flavour as there is nothing else in the dough other then the 3 ingredients to take away the full flavour.
You do not need to pull of your stand mixer or hand mixer, these are done only with a whisk. So clean up is a breeze, you have a bowl and a whisk.
You must be thinking, Becki… there is no way it’s that easy?! Well, I can assure you it is.
Once you get your 3 ingredients together, add to a medium sized bowl and whisk. Line your baking sheet with parchment paper. Roll into equal balls and flatten with a fork, criss cross pattern! Bake 9 minutes and bam done and done.
If you find your dough to be to soft and not rolling into balls easily simply put in the freezer for about 5 minutes to firm it up so it can be rolled into balls easier. This will all depend on the temperature of your peanut butter if it is to warm then it will be a bit more “squishy” sort-a say.
These are very soft after baking, so leave them to cool on the baking sheet until they cool completely and will transfer well into a container or serving platter.
These gems will last on the counter for up to 2 weeks if in a sealed container and and for 6 months if put into the freezer. They normally don’t last that long in my house though, to be truthful, I don’t think they even make it off the baking sheet most of the time….
Let’s get to it now, shall we?
15 Minute Peanut Butter Cookies
Yields: 15 Cookies Prep Time: 5-6 Minutes Bake Time: 8-9 Minutes
- 1 Cup Smooth Peanut Butter
- 1/2 Cup Packed Brown Sugar
- 1 Egg
- Line baking sheet with parchment paper, and pre heat oven to 350*F
- In a medium bowl, combine all ingredients and mix well
- Take spoon full and make 16 even sized balls, lay on baking sheet allowing room to flatten
- Use a fork, and flatten gently making larges X’s on the cookie
- Place in oven, on bottom rack, bake for 8-9 minutes
- Allow to cool on baking sheet, once cooled move to a platter or container
