Veggie Chicken Rice

If you have a family where getting them to eat their veggies is a bit “challenging” at the best of times, this is the perfect side dish for you. My youngest son loves veggies! My oldest son I basically have to spoon feed him if I want him to eat them. And well, my husband is the same thing. After about a million times reminding them there is a bowl of steamed vegetables sitting in front of them at the supper table they finally eat them…. but with great hesitation. Honestly, I think they are just tired of me nagging them while trying to enjoy their meal.

That’s why I came up with this Veggie Rice dish – it is perfect. The vegetables cook with the rice and they actually like it, vegetables and all. So, that is a big relief! And a win for me!

I enjoy making this rice as I use my rice cooker/steamer pot add everything in and leave it to cook. I love cooking, I truly do but I also like simplicity in the kitchen. This is such a simple delicious dish to create all in one pot.

Not only is this simple it is also flexible. You can change up the vegetables that you add. Use what you have on hand, or what pairs nicely with your main dish. If you have veggies that are on the verge of getting a little bad and you won’t use them before they end up in the trash – make this dish.

I use chicken boulin cubes to provide the chicken flavour, you can use vegetable flavouring or eliminate it entirely as the vegetables provide good flavour as well there are only a few spices but they add plenty of flavour. I like to break down my chicken cubes before hand so I use a portion of the water meant for the rice and dissolve the cubes then just add it to the rice. I find if you toss the cube into the pot it doesn’t break down as well. If you have powder flavouring that works perfect as well.

For this dish I use, salt, tumric powder, garlic powder, and black cardamom. That’s it! But each one provides a nice taste, and paired with vegetables and chicken flavouring turns out amazing!

For the rice, you can use which ever rice you have on hand. Although I would avoid using instant rice if you can. In our house we use basmati or Jasmin – both work well.

If you are looking for a one pot dish, you can always add pieces of pre-cooked chicken and have an all in one dish. I will normally serve this with chicken either made in the oven or BBQ. We also enjoy it with lemon pepper fish, it pairs nicely with either.

Chicken Vegetable Rice


  • 1 1/2 Cup Rice
  • Water – this is dependent on what type of rice you use and how you cook it. Check the water / rice ratio on your package
  • Add an additional 1/4 Cup of water for the vegetables
  • 2 Cups Chopped Vegetables (Carrots, Peas, broccoli, Onion)
  • 2 Chicken Boulin Cubes – broken down in some of the water you are adding to the pot
  • 1/2 Teaspoon Salt
  • 1 Teaspoon Tumric
  • 1/2 Teaspoon Garlic Powder
  • 1 Black Cardamon Pod (optional)

What To Do;

  1. Combine all ingredients in pot, cook as per instructions on rice.
  2. Once cooked mix well and serve.
